2016 Fermoy Cabernet Sauvignon
Varietals: 100% Cabernet Sauvignon
Appearance: Bright and brilliant crimson red with black tints.
Aroma: Rich and bold fruit aromas of mulberry, blackcurrant and raspberry compote, combine with complexing aromas of wet earth, dark chocolate and vanilla bean spice.
Palate: Medium to full-bodied, this wine shows an array of red and black fruit richness, with classical cassis notes to the fore. Rich, dark-fruited sweetness on the mid-palate is complimented by savoury roasting herb characters of bay-leaf and sage. Dark chocolate, aniseed and vanilla bean oak spice add complexity and depth, while an elegant acid line provides poise and length. Tannins provide structure and form, but are sufficiently soft and mouth-coating to allow for current drinking.
Oak detail: 8 months maturation in a combination of 33% new and 66% one-year-old French oak barriques from a selection of renowned Bordeaux cooperages.
Cellaring: Built for the long haul, tannins are sufficiently delicate to drink now, but will continue to evolve over the next 6-10 years.
Alcohol volume: 14.5%
Acidity: pH 3.62 TA 5.6 g/L
Residual sugar: 0.5 g/L
